Tell It Slant by Eugene Peterson | Peterson takes you through several of the parables as well as prayers in Luke's Gospel. While not solely focused on parables, this book does help one both "get into" particular parables as well as develop a feel for how and why Jesus told these stories.
Jesus Through Middle Eastern Eyes by Kenneth Bailey | Bailey provides cultural insights necessary to experiencing the shock and surprise of Jesus' impactful stories. While a bit technical at times, this book will prove to be a helpful reference and resource for entering into Jesus' parables as well as his parabolic life.
Stories with Intent by Klyne Snodgrass | This is a truly academic book, but true to its subtitle, it proves to be "a comprehensive guide to the parables of Jesus." While written for scholars, theologians, and pastors; Snodgrass organizes and writes in a way that makes this book a helpful reference for anyone wanting to dive into the stories Jesus told.
